Homemade Green Curry


My first attempt at making my own curry came out pretty good!
This curry (recipe here) has lemongrass, garlic, ginger, kefir lime leaf, lime zest, lime juice, shallot, green chili, turmeric,  coriander, cumin, and cilantro.  Actually, the recipe didn't call for lime leaf, but I love the flavor and it was a good decision, bringing out the citrus.  I reduced the 5 chilies in the recipe down to 1, after almost melting my face off when I licked just a little of the chili to test hotness   I gargled milk.  I hate milk and am eating vegan, but I didn't care because it's the only thing that neutralizes capsaicin from the chili.

Anyhow... after mixing all this up in my blender, I mixed it with a can of light coconut milk and simmered bok choy, chinese eggplant, green beans, sprouts, and some pre-cooked tofu.

Not to shabby for my first go at curry paste.  I have plenty of leftovers, so it may be even better after the flavors meld.

Two Down, One To Go

He did it!  Charley qualified again and won third place!  
He got a 181/200.
We're so proud of our boy!  That was a much different competition than the Cleveland show.

Stress #1: It was 2 hours away, and Charley hates the car.  
Stress #2: We got there too early, Charley was bored.  
Stress #3: It was really crowded in the training facility, literally we were crammed in like sardines.  Charley hates feeling crowded and thinks he'll get stepped on.  So, we spent most of the day practicing and waiting outside.  

It was a long day for him before he went in the ring.  He did the best he could, and but you could tell he was just done, before we even preformed.  But he still did everything I asked!  :o)

Even still, we're proud of him for doing the best he could!  Good job Charley!  We have one more month of practice before our next show.  One more qualifying score, and he'll have his CD!!!

30-40 minutes later you'll have a 115 calorie snack!

Some Cuties!


Anybody who's name starts with a C, has been sleeping on the couch the last few nights.  Rugby had dental surgery and is recovering in the bedroom without his crazy brothers!  The C's don't seem to mind, we just cuddle right up!

Magic Hummus


If you have a Magic Bullet, you know how awesome they are.  If you don't, take my word, go get one!
Not only do they perfectly blend smoothies, but they can make hummus too!
I love hummus as a healthy dip for veggies.  My recipe is so simple.
1 can garbanzo beans
Juice of a lemon
A tablespoon or so of tahini
1/4 c water
Pulse a few times to chop everything else, and blend!  Easy as can be.
If you're feeling creative, mix in a few cloves of garlic or some roasted red peppers.
Serve with an assortment of mixed veggies, pita chips, or enjoy on a sandwich with some spinach, tomato, sprouts, and cucumber.

It's Not Eggs, It's Tofu Scrambler!

This is one of may best breakfasts so far.  Really, it's more of a brunch by the time I get around to making it, but whatever!
It's not eggs, it's Tofu Scrambler!  I love this stuff.  It's a packaged spice mix that you stir into crumbled tofu, heat it in a pan, and it's the consistency of eggs, and better flavored.  I actually prefer this to scrambled eggs.  I saute onions, peppers, mushrooms, then add my tofu scrambler and tomato.  When it's heated through, I top with avocado and cilantro.  It's filling and full of good vegan protein and veggies!  Yummy!!!

Oh, My Dog!

This is how I walk around the house in this robe. I wore it when Charley was a baby to take him outside. Whenever I wear it now, he turns into that baby again. I have to tuck the ends into the pockets to have any chance of not getting untied!
